Yummy recipe

This is such a great full-meal salad.  I hope you will try it.

Chicken, Corn & Spinach Salad w/Bleu Cheese Dressing
Serves 2

Divide these ingredients between 2 medium-size salad bowls:
Fresh spinach
Chicken breast -- 2/3 cup (I use canned)
1/2 c. frozen corn, thawed
Chopped apple or pear, any amount you want
1/3 c. Dried cranberries

Dressing ( this makes enough for several salads):
Blend all ingredients in something with a good lid for shaking & storing the leftover dressing


1/2 c. olive oil
2Tbsp. Balsamic vinegar
2Tbsp. Red wine vinegar
2Tbsp. semi-sweet wine, orange juice or apple juice (use more to taste)
2Tbsp. honey (or more to taste)
Sea salt
Black Pepper

Drizzle the dressing over the salad & then add fresh bleu cheese, crumbled, to taste.  Top with a few glazed pecans if you like.  Serve with some fresh French or Italian bread or just a good hearty cracker.

Note:  We hardly talk during this meal -- it is that good!
