What's Cookin'?

Hey everyone!  From what I've been reading, I think Easter weekend was a pretty good one for most of us.  Now I'm trying to decide what I want to blog about....hmmm?  Well, I thought I'd share what I've been cooking lately and how I plan menus.

This is our kitchen desk-buffet and the perfect spot for "Planning Central," with everything I need close at hand.  Now, I no longer grocery shop with coupons, and I really don't pay that much attention to grocery store ads.....unless it's some really smokin' deal.  It's just the two of us, and I did my share of "coupon-clipping" when we had kiddos at home.  My menu plans are created around what we really like to eat, how many meals I actually want to cook for the week, and a few "This sounds good, let's try it!" ideas, usually from Pinterest.

There are so many cute and colorful menu planner sheets on Pinterest, but this one caught my attention Free Printable Menu Planner Sheet.  I printed it off on white cardstock and framed it under glass so I can use a dry-erase pen.

This is my Homekeeping Planner.

I've shared before how much I enjoy the "Create 365 Happy Planner" and decided to make a few additional purchases from their vast selection of products to create my own Homekeeping Planner.

Among the things I added to make it perfect for me, is this Meal Planning section.  One page is for your menu plans for the week, and I always write these in pencil....seriously, life happens and things sometimes get changed or switched around!

The grocery shopping list is on the other page.  I generally take this entire Homekeeping Planner with me to the store.

Just to the left of "Planning Central," are my most-used cookbooks....within easy reach.

A couple of years ago, I purchased a Becky Higgins Project Life Recipe Kit & this 6X8 album (I got mine at Michael's with a coupon).  I had handwritten recipes, and tons of loose recipes and wanted to get them organized.  I was ruthless in my purging and now everything fits in this album with plenty of room for growth.

I love that there are pocket page protectors so I didn't have to rewrite our old family faves.

With the above tools, the pantry just a few steps away, and the Keurig within easy reach,  I can do my planning quite easily.

Now, maybe you would like to see what's been on the menu plan lately.....please say "yes" and make my day!

I love having a good veggie-filled, whole-meal salad, and this one was so good.  The orange poppy-seed dressing was delicious.  You could add an artisan bread, but we didn't need it.

We didn't have a big crop of citrus this year (next year's should be huge), but we had some lemons that were begging me to create something "lemony" and this Lemon Bread was delicious!

We have chicken several times a week, so I'm always looking for something new to try.  I love using the crockpot, but chicken always cooks so fast and tends to get dry in the crockpot.....breasts do anyway.  So, I'm still working on honing in on the right cooking time for this recipe.  It was truly delicious with the veggies done to perfection....the chicken was just a bit dry.

I really like having at least one "meatless" meal each week, and this was very good.  If you haven't tried Quinoa, it's good but might take some getting used to.  It's loaded with nutrients, plus it has 5g of fiber & 8g of protein per cup.  With the addition of the black beans in this recipe, you've got a very well-balanced meatless meal.  I did nix the jalapeƱo and went easy on the chili powder and cumin.....I  can't eat very spicy things.  We added a dollop of sour cream and a few crispy nacho chips to finish off this meal.
One Pan Mexican Quinoa - Wonderfully light, healthy and nutritious. And it's so easy to make - even the quinoa is cooked right in the pan!

I should have known better than to use uncooked rice in this recipe....rice never thoroughly cooks for me in a dish like this.  It was quite good, except for the"al dente" rice!  I'll be cooking the rice ahead of time from now on.  This is another meatless meal, but we didn't have this and the one above in the same week!

This was delicious and a nice alternative to our typical kielbasa, mashed potatoes & sauerkraut meal....but that's good, too!

This was so good, and the addition of some steamed veggies made it a complete meal.

If you need a dessert in a hurry, just make sure to always have a couple of cake mixes & pie-fillings on hand.  There are a ton of different combos, but this was scrumptious.  The addition of a very small amount of almond flavoring mixed in with the cherries was a nice tip.

This is what is on the plan for tonight.  I love one-pan meals and leftovers.  It's pretty much impossible to cook a meal for just 2 people, and I don't even try.  I plan my weekly menus to utilize leftovers.....cook once, serve twice or sometimes more!  I'll let you know how this turns out, but just look at it...it will have to be good!

Thanks for stopping by and maybe getting some new ideas for good stuff to cook up.  I would like to do this kind of post on a more regular basis, but I'm not committing to anything right now.  If you try any of the above, let me know what you think or how you might have tweaked the recipe.  Hope you have a great rest of your week!

Who You Know and What They Do!

Hey everyone!  I hope you all had a wonderful Easter weekend!  We were suppose to have company for Easter dinner, but my friend got very sick a couple days earlier, so she and her hubby couldn't make it.  I feel so badly for her....what started out as a bad sinus infection is now accompanied by Shingles!  Yes, you heard me right!  Candy and her hubby traveled here in their motor home for a couple of months of fun in the sun, and now she just wants to get well enough to go home.  Please keep her in your prayers and positive thoughts.

I've been entertained this morning with pics of the antics of my two youngest granddaughters.  They live in VA and last week was their Spring Break.  Our son and family spent the week in CA, having some (a lot) fun and also narrowing down a search for where they want to live....yes, lucky us will have them a whole lot closer when they move in June!  Insert "Happy Dance" here!  Anyway, I'm doing the typical Nana-thing with photos and some bragging; and of course, I think you should all agree with me that they are truly "Super-Cute!"  Just kidding....no, NOT KIDDING!  Oh well, you be the judge.

See, I told you they were super-cute!

Best way to view daddy's new office!

Already has the "Beach Babe" hair!

I'm not quite sure how these two "Gangsta-Sistas" passed White House security......

But here they are for the second year in-a-row at The White House Easter Egg Roll!

Daddy is the Chef for one of the restaurants, SweetGreen, selected as a food vendor for this event....so it really is all about who you know and what they do!  Even better when that
special person is your daddy!

Thank you so much for stopping by and allowing me to do some Momma & Nana-bragging.  Hope you have a wonderful week!

Warm hugs,

Oh Happy Day!

Hey everyone!  Oh, what a happy day it is!  It's the first day in a very long time, that doesn't revolve around a medical appointment or treatment, and I am happily still in my pjs enjoying and savoring this day.  Hopefully, this will be my last medical-related post for some time to come; but I wanted to share a few pics from yesterday.

Do I look happy or what?

I thought I might dissolve into a puddle of tears, but that did not happen.
I just could not stop smiling!

This will go on the wall in my craft room, close to my laptop, where I can see it each day.

I rang the ding-dong out of this bell!

What you can't see, because everyone was too busy watching and taking pictures of me, were the people who had gathered to wish me well and celebrate this milestone.....my hubby (who I  praise and will be forever grateful for his constant vigilance by my side), a very sweet friend (from high school) & her hubby who came to cheer me on, my wonderful Radiation Therapists (Kaleb & Justin), my nurse (Susan), & a sweet volunteer (DeDe) -- true cheerleaders throughout my journey!

I have no delusions that I can relax my vigilance, because the cancer I had has a high percentage of rearing its ugly head again.  I'm not planning to dwell on that, but I will continue to do self-exams and will be seen for mammograms, ultra-sounds & doctor exams every 6 months for the next 5 years.  Five years seems to be the magic number, if you make it that far, your chances of getting it again goes down....but I doubt "Cancer" has read the rule book.  We each have to be the master of our bodies.  Doctors have their role, but WE are the ones in charge.  My hope for each and everyone out there, who is over 40, is to please get a baseline mammogram and start doing monthly self-exams.  Be proactive and get well-acquainted with your body.....you are the best first-line of defense.  Also, if anyone of you has a question or just wants to chat, please feel free to email me.  I'm not claiming to be an expert, but I'm very well-versed about my cancer and treatment.  Now enough of that!

Spring is blowing in like a lion here in our part of the AZ desert and wrecking havoc with allergies!  I hope it is beautiful where you are!

The Day Has Finally Come!

Well, it is finally here! In less than 2 hours I will be climbing on the radiation table for my 20th and final treatment! I'm optimistically hopeful I can make it through "the bell ringing ceremony" without blubbering, but no promises. Seven months ago, this day seemed so far, far away, and I was very unsure about what life would be like during those 7 months. I don't think I could have done this without the best husband by my side every step of the way. Rick and our children and grandchildren are my true blessings. I cherish the bonds of friendship that have occurred during my journey, and the friendships that have gotten stronger because of it. I thank ALL OF YOU for being part of my life and allowing me to share this journey with you.

I hope to have photos to share in the next couple of days. Thank goodness I won't be the one in charge of camera duty!

Warm hugs,

Bunnies, Eggs & Nests, Oh My!

Hey everyone!  Can you believe how fast this month is zipping by?  I can't either, but I'm so okay with that....it means my cancer journey is almost over.  I only have 6, yes I said 6 more radiation treatments to go!  YAY!  I think it means that Spring is now my favorite time of year!

I love that bunnies are playing and hopping around every corner.  They do such a sweet job of saying "Welcome, there is love in this home."

"Come in, there are pretty flowers to catch your eye and make your nose twitch, if you are a bunny."

"Look around, there are many sweet treasures, both old and new."

"Oh, look, there is a sweet nest with a delicate crystal bird."

"Bunnies crouch low, and........

Bunnies stand tall."

"Some bunnies even watch over nests filled with pretty blue eggs."

"Yes, there is love in this home.  Love between this man and this woman, that rises with gratitude for  the gifts of life, and with fortitude when there are struggles.  Yes, there is love in this home, and we welcome Spring with open arms of happiness and gratitude."

I truly hope each of you will have a wonderful week of SPRING!

Bunnies + Nests = SPRING!

Hey everyone!  Have bunnies and "all things Spring & Easter" taken over your homes yet?  The bunnies, especially, are busy as ever here;  but I'm trying to keep those "wascally wabbits" under control!

Those bunnies would be much better off eating some fruit & staying away
from chocolate....just sayin'!

Maybe they are looking for some good luck.  This is my only attempt for St. Patty's Day......hope I can keep it alive!

Those rabbits certainly love their carrots.

"In your Easter bonnet, with all the fringe frills upon it, you'll be the grandest lady
in the Easter Parade."  This saucy little lampshade made me think of that cute song!

Those hoppity-hoppers better stay away from my flowers or we might be enjoying Rabbit Stew!
 No, I would never!

It's so much fun to lighten things up this time of year.  From light pastels to richer tones, it all beckons Spring.  Some of you are probably still getting snow, while others are seeing and feeling the first glimpses of the season.  Here in the Arizona desert, Spring has sprung ahead of its March 20th due date!  We have to savor as much of this season as possible, because we usually get a shorter version and then get thrust right into Summer!

I rescued this sweet little brown rabbit planter from the dark lower shelf of a Goodwill Store many years ago.  He doesn't mind at all whether he is carrying real or faux flowers!

Bunnies found their way onto my very simple mantel-scape.

Jane Austen certainly got it right, didn't she?

I have more Spring-Easter things to share, but decided not to overwhelm you with photo-overload.  I truly appreciate your visits and comments and hope you are having a wonderful week!
